But here's where it gets intriguing: this isn't just a simple reopening. Chef Kimura has spent over a decade searching for the perfect space, and his perseverance has paid off. With a mere eight seats, this restaurant embodies his vision of personalized dining.

"For over 12 years, I've sought a space like this," Chef Kimura shared. "A sushi restaurant's needs are unique, and finding a suitable location within a hotel was a priority. I'm thrilled to have finally discovered this gem."

The previous Sushi Kimura, with its 22 seats, is a distant memory. This new venture offers an exclusive, intimate setting, allowing Chef Kimura to focus on each guest's individual experience. "In the past, we had to ensure a minimum of three chefs, but now, with just eight seats, I can provide personalized attention to every diner."

And the menu? It's a carefully curated, fixed selection, priced at S$250 for lunch and S$380 for dinner. A far cry from the days of multiple menu choices, this streamlined approach ensures a focused, exceptional dining journey.

But it's not just about the setting and menu. Chef Kimura's passion for sourcing the finest ingredients directly from Japan's farmers and fishermen remains at the heart of his cuisine. And he's back with some exciting new additions to his lineup.

"The supply chain is stronger than ever," he enthuses. "I've added three new farmers, including one who grows organic radishes in Akita and smokes them to perfection. The market's smoked radish pickles pale in comparison; they're too hard and overly smoky. But these radishes are tender, with a subtle, delightful smokiness that enhances sushi."

There's also a rare, precious seaweed from Kochi, a special freshwater variety that Chef Kimura discovered through a friend. "It's a unique, rare find, even in Japan. Its use in sushi and soups adds an extraordinary depth of flavor."

With 28 years of experience, Chef Kimura has cultivated relationships not just with producers but also with fellow chefs at the pinnacle of their craft. "We can source exactly what we need, from wasabi grown at the base of Mount Fuji to rice cultivated by my friend, the best organic farmer in Yamagata. And the white fish? Caught by a renowned fisherman in my hometown of Kanagawa, who also spear hunts. His fish is sought after by two- and three-Michelin star restaurants across Japan, not just for sushi but also Chinese and French cuisine."

Chef Kimura's attention to detail extends to his new kitchen toys. He's invested in a top-of-the-line rice cooker from Japan, specially ordered to accommodate Singapore's voltage. This innovative tool ensures consistent, high-quality rice, a cornerstone of sushi, without relying solely on the chef's expertise.

In an industry where staffing costs are a significant challenge, such smart, efficient processes make a world of difference. "At the previous Sushi Kimura, we were profitable but couldn't expand. Here, with fewer seats, we can still grow."

And with full ownership, Chef Kimura is free to focus on what matters most - his staff and the dining experience. "If I can pay my staff fairly and ensure stable earnings, that's success to me. I don't have to worry about cutting costs or passing them on to customers. My purpose is different now."

The restaurant is almost ready to welcome guests, with new plates from a Japanese potter friend and artwork adorning the walls, created by an artist friend using kimonos that belonged to Chef Kimura's ancestors. "My regulars haven't forgotten me," he smiles. "They've sent congratulations and are eager to book."

Chef Kimura's vision is clear: "I hope to be here for at least 20 years. I dream of making sushi until I'm 80."

And what brings him the most joy? "When customers' grown-up children return to dine. My longest customers have been coming for 14 years. Their children, who were once six or seven, are now over 20, bringing their partners. That's the ultimate happiness - to be remembered across generations."
